Monkey Bread






Ingredients:
  • 2 slices day old bread (I used sprouted ezekial)
  • 1/4 cup pumpkin
  • 1/2 tsp cinnamon
  • 1/2 tsp vanilla extract
  • 1 tsp brown sugar
  • 1 tsp maple syrup
  • 2 TBSP milk of choice
  • 1 flax egg

Directions:
  • Allow flax egg to sit for about 5-10 minutes.  While you’re impatiently waiting, cut your bread in to small cubes.
  • Mix remaining ingredients and add to flax egg
  • Coat bread cubes into mixture
  • Pour mixture into greased ramekein
  • Bake (covered with aluminum) for 25 minutes
  • Remove aluminum and bake for 5 more minutes
  • Top with banana, more maple syrup, and peanut butter.
