Ingredients:
- 2 slices day old bread (I used sprouted ezekial)
- 1/4 cup pumpkin
- 1/2 tsp cinnamon
- 1/2 tsp vanilla extract
- 1 tsp brown sugar
- 1 tsp maple syrup
- 2 TBSP milk of choice
- 1 flax egg
Directions:
- Allow flax egg to sit for about 5-10 minutes. While you’re im
patiently waiting, cut your bread in to small cubes. - Mix remaining ingredients and add to flax egg
- Coat bread cubes into mixture
- Pour mixture into greased ramekein
- Bake (covered with aluminum) for 25 minutes
- Remove aluminum and bake for 5 more minutes
- Top with banana, more maple syrup, and peanut butter.
